At Home Baking Recipes During COVID-19

Hi Superflower family, 

There is always something so therapeutic about baking, especially being home during these times. Baking not only gets our mind off of the stresses of these times, but also makes the people living with us very happy too :) ! We love supporting our local bakeries, but since some of them have sadly been shut down, it was the perfect time to break out all of our ingredients from the kitchen and create our own little bakery.

From brownies to banana bread, we have rounded up some of our favorite baking recipes that have been helping us satisfy our sweet tooth with some help from our loved ones in quarantine with us: 

Roasted Rhubarb Tart: This Roasted Rhubarb Tart recipe from Eye Swoon (@eyeswoon) has been a go-to recipe for us over the past few weeks. Superflower intern Charlotte has been taking this time at home to spend time trying new recipes and further exploring her passion for food and wellness. “I honestly have had low expectations for rhubarb in the past, but this tart is seriously an exception and really easy to make but looks super professional”. This is best served with full-fat yogurt or creme fraiche (you will thank us later).

Gluten Free Banana Bread: A classic go-to baking recipe to get everyone in the house running to the kitchen is a good old banana bread. This version from Rachl Mansfield (@rachlmansfield) is a Gluten Free Banana Bread that has no added sugar besides bananas (you can add nuts or chocolate chips if you like at the end)! This recipe is perfect for any summer morning or snack with a cup of coffee. 

Chocolate Zucchini Brownies: A new favorite twist on the classic brownies are these awesome Chocolate Zucchini Brownies by Healthy with Nedi (@healthywithnedi). Zucchini is one of the most hydrating vegetables as it is 95% water based and this makes the brownies much more clean. These brownies are the best treats to have in the house that the entire family can enjoy and not even notice they are getting some extra fiber in these!
